1/4 pound salt pork
1/4 cup brown sugar
1/3 cup molasses
1 teaspoon Coleman's dry mustard

Soak 2 cups of dried beans in water overnight for about 24 hours at room temperature.

Soak the clay pot in water for about 20 minutes before use.

Drain the soaked beans and place half of them in the bottom of the clay pot.

Chop and add half of the medium onion on top of the beans.

Layer about 1/4 pound of sliced salt pork over the onions.

Add the remaining half of the beans on top of the salt pork.

Add the remaining half of the onion on top of the beans.

Layer another 1/4 pound of salt pork on top of the onions.

Sprinkle 1/4 cup of firmly packed brown sugar over the salt pork.

Pour 1/3 cup of molasses over the brown sugar.

Add 1 teaspoon of Coleman's dry mustard on top.

Cover the clay pot and place it in a cold oven.

Set the oven temperature to 370 degrees Fahrenheit.

Bake for around 4 to 5 hours, stirring every hour to coat the beans with the sauce.

After about 4 and a half hours, check if the beans are done and have changed color.
