Today, Damper is enjoyed across Australia, often served with butter and jam, and has evolved into a beloved comfort food at gatherings and outdoor events.

Add 4 teaspoons of baking powder to 2 cups of flour.
Add a pinch of salt and 1 tablespoon of sugar, then stir.
Rub 2 tablespoons of butter into the flour mixture until it resembles coarse breadcrumbs.
Add 1 cup of milk and mix until combined, the dough will be sticky.
Flour the surface and knead the dough for about a minute until it forms a ball.
Mark a cross in the dough with a knife and glaze with a little milk.
Sprinkle flour over baking paper and place the dough on top.
If using a camp oven, pre-warm it with coals on the lid and bottom, then place the damper inside and cover.
If baking in an oven, set it to 180°C (350°F) and bake for about 30 minutes.
Check after 20 minutes, tap to check if crusty and golden brown, then bake for an additional 5 minutes if needed.
