Cultural Context

Jericallas are a traditional dessert from the Mexican state of Jalisco, often associated with the region's rich culinary heritage. They are a delightful blend of custard and flan, showcasing simple ingredients like milk and eggs, often flavored with cinnamon and lime. This dessert reflects the fusion of Spanish influences with local ingredients, and today, variations can be found across Mexico, enjoyed for their creamy texture and comforting taste.

1

Preheat the oven to 200°C (392°F).

2

In a saucepan, combine 1 liter of milk, 1 cup of sugar, 1 cinnamon stick, and 2 teaspoons of vanilla extract.

3

Heat the mixture over medium heat, stirring occasionally, until it comes to a boil; this should take about 8 minutes.

4

While the milk mixture heats, separate the yolks from 6 eggs and whisk the yolks until well combined.

5

Once the milk mixture has boiled, remove it from heat and temper the egg yolks by gradually adding a little of the hot milk while whisking constantly.

6

After tempering, combine the egg yolk mixture with the remaining hot milk, mixing well.

7

Strain the mixture through a fine sieve to remove the cinnamon stick.

8

Pour the mixture into small baking dishes or flanera molds.

9

Prepare a water bath by placing the filled molds in a larger baking dish and adding hot water until it reaches about one-third up the sides of the molds.

10

Place the baking dish in the oven and reduce the temperature to 180°C (356°F).

11

Bake until set, approximately 30-40 minutes.

12

Carefully remove the molds from the water bath and let them cool to room temperature.

13

Once cooled, refrigerate the jericallas until chilled before serving.
