Toast 3 tablespoons of sesame seeds in a hot pan until golden brown and set aside to cool.
In the same pan, toast 5-6 green chilies and some timur until fragrant, then set aside to cool.
Grind the toasted sesame seeds, green chilies, and timur into a fine powder using a mortar and pestle or grinder.
Transfer boiled potatoes to a large bowl.
Chop and add a small onion to the potatoes.
Add 1 teaspoon of roasted cumin powder and 1 teaspoon of chaat masala to the bowl.
If you like it spicy, chop additional green chilies and add them to the mixture.
Heat 5-6 tablespoons of mustard oil in a hot pan until it reaches a smoking point, then add fenugreek seeds and let them brown slightly.
Add a pinch of turmeric powder and some red chili powder for color to the hot oil.
Pour the hot oil over the potato mixture along with the ground sesame, green chilies, and timur.
Season with salt to taste and add lemon juice if desired.
Mix everything thoroughly by hand or with gloves until well combined.
Garnish with chopped coriander leaves and mint leaves before serving.
