Roast the peeled plantains in a preheated oven at 400 ºF (200 ºC) for 35 mins until light golden and crispy on the outside. Remove and crush lightly with a mortar and pestle.

Heat 2 quarts of water over medium heat in a medium soup pot. Add garlic, leek, cilantro ancho, allspice berries, oregano, olive oil, salt, and pepper. Stir and simmer for 15 minutes, adding more water if necessary.

Add the crushed plantains and boil until heated through, ensuring they still have some bite.

Remove from heat, sprinkle with cilantro leaves, remove allspice berries, adjust salt if necessary, and serve hot.
