Preheat the oven to 350 degrees.
Prepare a 9 by 5 inch metal loaf pan with cooking spray, using coconut oil.
Add a strip of parchment paper across the center of the pan for easy removal later.
In a bowl, whisk together 1 cup of unbleached all-purpose flour, 1/2 cup cocoa powder, 1 teaspoon baking soda, and 1 teaspoon kosher salt. Set aside.
In a small bowl, melt 4 tablespoons of butter and 1/4 cup of coconut oil together.
Once melted, stir the butter and coconut oil together and set aside to cool.
In a medium-sized bowl, combine the cooled butter and coconut oil with 3/4 cup of firmly packed golden brown sugar, 1 teaspoon of pure vanilla extract, and 2 eggs (at room temperature). Stir to combine until the sugar dissolves.
Pour the dry mix into the wet mix and stir with a spatula or wooden spoon until combined. The batter will be thick.
Grate one medium-sized zucchini to yield 2 cups of grated zucchini and add it to the batter along with 1 cup of semi-sweet chocolate chips, holding back a few chips for topping.
Stir in the grated zucchini and chocolate chips, then transfer the batter into the prepared loaf pan, smoothing it out into an even layer.
Top the loaf with a tiny handful of the reserved chocolate chips.
Bake in the oven for 15 minutes or until a cake tester comes out clean.
After baking, let the loaf cool in the pan for 15 minutes on a wire rack.
Remove the loaf from the pan and let it cool completely for an additional 30 minutes.
Slice the loaf into quarter to half inch slices.
