Ingredients
- ●2 dozen fresh clams
- ●1/4 cup olive oil
- ●2 cloves garlic, minced
- ●1/4 cup fresh parsley, chopped
- ●1 lemon, juiced
- ●1/2 tsp red pepper flakes
- ●Salt and pepper to taste
Instructions
- 1Preheat the grill to medium-high heat.
- 2In a bowl, mix together the olive oil, minced garlic, chopped parsley, lemon juice, red pepper flakes, salt, and pepper.
- 3Rinse the clams under cold water to remove any sand or grit.
- 4Place the clams on the grill grates, cup side down, and close the lid.
- 5Grill the clams for about 5-7 minutes, or until they start to open.
- 6Once the clams are open, brush them with the olive oil mixture.
- 7Grill for an additional 2-3 minutes to allow the flavors to meld.
- 8Remove the clams from the grill and discard any that did not open.
- 9Serve immediately with lemon wedges and extra parsley for garnish.

Instructions
- 1Peel the green plantains and cut them into thick slices.
- 2Bring water to a boil in a pot and add salt.
- 3Add the plantain slices to the boiling water and cook until tender, about 10 minutes.
- 4Remove the plantains from the water and let them cool slightly.
- 5Heat oil in a skillet over medium heat.
- 6Flatten each plantain slice using a flat surface or a tostonera.
- 7Fry the flattened plantains in the hot oil until golden brown, about 2-3 minutes per side.
- 8Remove the plantains from the oil and drain on paper towels.
- 9Season with salt, garlic, lime juice, and pepper to taste.
- 10Garnish with fresh coriander before serving.
