Ingredients

  • 2 dozen fresh clams

  • 1 lemon, juiced

Instructions

  1. 1Preheat the grill to medium-high heat.
  2. 2In a bowl, mix together the olive oil, minced garlic, chopped parsley, lemon juice, red pepper flakes, salt, and pepper.
  3. 3Rinse the clams under cold water to remove any sand or grit.
  4. 4Place the clams on the grill grates, cup side down, and close the lid.
  5. 5Grill the clams for about 5-7 minutes, or until they start to open.
  6. 6Once the clams are open, brush them with the olive oil mixture.
  7. 7Grill for an additional 2-3 minutes to allow the flavors to meld.
  8. 8Remove the clams from the grill and discard any that did not open.
  9. 9Serve immediately with lemon wedges and extra parsley for garnish.

  • water
  • oil

Instructions

  1. 1Peel the green plantains and cut them into thick slices.
  2. 2Bring water to a boil in a pot and add salt.
  3. 3Add the plantain slices to the boiling water and cook until tender, about 10 minutes.
  4. 4Remove the plantains from the water and let them cool slightly.
  5. 5Heat oil in a skillet over medium heat.
  6. 6Flatten each plantain slice using a flat surface or a tostonera.
  7. 7Fry the flattened plantains in the hot oil until golden brown, about 2-3 minutes per side.

  10. 10Garnish with fresh coriander before serving.
