Welcome to the channel and introduce the recipe for seafood gumbo.
Show the ingredients: shrimp, boneless skinless chicken thighs, crab claws, chicken broth, andouille sausage, celery, bell pepper, garlic, Creole seasoning, fresh thyme, vegetable oil, all-purpose flour, fire-roasted diced tomatoes, and frozen okra.
Trim the chicken thighs and let them drain on a paper towel.
Heat 1/2 cup of vegetable oil in a cast-iron skillet over medium-high heat.
Add 1/2 cup of all-purpose flour to the hot oil to make the roux, whisking constantly.
Cook the roux until it reaches a chocolate color, adjusting the heat as necessary to avoid burning.
Once the roux is ready, add the chopped celery, onion, and bell pepper to the skillet and cook for 2-3 minutes, stirring to combine.
Transfer the roux and vegetable mixture to a crock pot.
Add 2 cups of chicken broth to the crock pot along with the Creole seasoning.
Layer the shrimp and crab claws on top of the mixture in the crock pot, but do not mix them in yet.
Add the frozen okra and 2 cans of fire-roasted diced tomatoes to the crock pot.
Cover and cook the gumbo on high for 4 hours.
