In a small bowl, combine 1/2 teaspoon of ground cayenne pepper, 1/2 teaspoon of ground white pepper, 1/4 teaspoon of ground black pepper, 1 1/2 teaspoons of paprika, 1/4 teaspoon of dried thyme, 1/4 teaspoon of dried oregano, one crushed bay leaf, and one teaspoon of salt. Stir well to mix the seasonings.

In a large pot, heat 3/4 cup of vegetable oil over medium heat.

Add the chopped onion, celery, and bell pepper to the pot. Increase the heat to high and stir frequently.

Add the minced garlic, 3 tablespoons of felt powder, 2 teaspoons of hot pepper sauce, and the seasoning mixture. Cook for 5 minutes, stirring often.

Add 1 1/2 cups of canned tomato sauce and cook, stirring often, until the sauce thickens slightly.

Stir in 7 cups of fish stock and bring it to a boil. Reduce the heat and simmer the sauce for one hour, stirring occasionally.

Add 2 cups of fresh shucked oysters in their juice, 1 pound of peeled and deveined shrimp, and 1 cup of crab meat. Stir the pot well.

Cover and simmer the gumbo for 5 minutes.

Turn off the heat and let the gumbo stand for 10 minutes before serving hot.
