Today, alfajores have gained popularity beyond Argentina, with variations found throughout Latin America and even in international bakeries.

In a large bowl, beat the butter with the sugar until creamy and whitish, about 5 minutes with an electric mixer.
Add the egg yolks, whole egg, and vanilla essence to the butter and sugar mixture. Beat until well incorporated.
In another bowl, sift together the flour, cornstarch, baking powder, and salt.
Add the dry ingredients to the wet mixture in several additions, mixing gently until a homogeneous dough forms.
Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.
Preheat the oven to 180°C (350°F) and prepare a baking tray with parchment paper.
Remove the dough from the refrigerator and roll it out on a lightly floured surface until about 5 millimeters thick.
Cut circles about 5 centimeters in diameter with a cookie cutter or small glass.
Place the circles on the tray, leaving space between them.
Bake for 10-12 minutes until just golden brown around the edges.
Remove from the oven and let cool completely on a rack.
Spread a generous amount of dulce de leche on one lid and cover with another lid, pressing gently.
Roll the edges of the filled alfajor in grated coconut.
