Alfajores de Coco

Cultural Context

Alfajores de Coco are a beloved treat in Argentina, often enjoyed during celebrations and holidays. These coconut-filled cookies are a variation of the traditional alfajores, which are typically made with cornstarch and filled with dulce de leche. The addition of coconut adds a delightful tropical twist, making them a favorite among many. Today, alfajores have gained popularity beyond Argentina, with variations found throughout Latin America and even in international bakeries.

200 grams of butter
150 grams of sugar
2 egg yolks
1 whole egg
1 teaspoon of vanilla essence

150 grams of cornstarch
1 teaspoon of baking powder
1 pinch of salt
400 grams of dulce de leche
100 grams of grated coconut

butter

🥗Healthier: coconut oil

💰Cheaper: margarine

Coconut oil adds a subtle flavor and is dairy-free.

dulce de leche

🥗Healthier: caramel sauce

💰Cheaper: sweetened condensed milk

Caramel sauce provides a similar sweetness.

1

In a large bowl, beat the butter with the sugar until creamy and whitish, about 5 minutes with an electric mixer.

2

Add the egg yolks, whole egg, and vanilla essence to the butter and sugar mixture. Beat until well incorporated.

3

In another bowl, sift together the flour, cornstarch, baking powder, and salt.

4

Add the dry ingredients to the wet mixture in several additions, mixing gently until a homogeneous dough forms.

5

Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.

6

Preheat the oven to 180°C (350°F) and prepare a baking tray with parchment paper.

7

Remove the dough from the refrigerator and roll it out on a lightly floured surface until about 5 millimeters thick.

8

Cut circles about 5 centimeters in diameter with a cookie cutter or small glass.

9

Place the circles on the tray, leaving space between them.

10

Bake for 10-12 minutes until just golden brown around the edges.

11

Remove from the oven and let cool completely on a rack.

12

Spread a generous amount of dulce de leche on one lid and cover with another lid, pressing gently.

13

Roll the edges of the filled alfajor in grated coconut.
