Liver and Onions

1 lb liver
1 cup whole milk
1/2 tsp garlic powder
2 large onions
4 tbsp butter
1/2 tsp salt
1/4 tsp black pepper
1 tsp paprika
1/2 tsp cumin

Fill a bowl with whole milk and soak the liver pieces for at least 1 hour at room temperature.

Slice garlic into pieces (not diced).

Slice 2 onions into ribbons.

Render fat from about a half pound of bacon in a pan over low heat until sufficient fat is extracted.

Once enough bacon fat is rendered, remove the bacon and add butter to the pan.

Add the sliced onions to the pan and sauté until they are near caramelized.

Add the sliced garlic to the pan after the onions have cooked for a bit.

Rinse the soaked liver pieces before adding them to the pan.

Season the liver with salt, black pepper, paprika, and cumin.

Cook the liver for a few minutes until done, being careful not to overcook it.
