Liver and Onions

Soak the liver in milk for an hour to soften the texture and remove metallic taste.

Thinly slice two medium-sized onions.

Heat a pan with a decent amount of butter over medium heat.

Sauté the sliced onions until they turn golden brown, about 10 minutes.

Remove the onions from the skillet to prevent them from overcooking.

Pat the liver dry and dust it lightly with flour or cornstarch.

Place the liver into the buttered pan and cook each side for 2 to 3 minutes until medium doneness, pink in the center.

Return the caramelized onions to the pan with the liver and let them mingle on low heat for a minute or two.
