In a bowl or KitchenAid mixer, add 1/2 cup lukewarm milk, 1 tablespoon active dry yeast, 1 teaspoon granulated sugar, and 2 tablespoons all-purpose flour. Whisk and set aside to activate yeast.
In a large bowl, combine 4 1/2 cups all-purpose flour or bread flour, 1 cup granulated sugar, 1 tablespoon ground mahlep, and 1/2 teaspoon salt. Whisk together.
Prepare mastic gum by grinding it with sugar to make a powder, then add 1/4 teaspoon to the dry ingredients.
In another bowl, combine 3/4 cup lukewarm milk, 2 eggs, the zest of an orange, and 2 teaspoons vanilla extract. Whisk together.
Combine the dry ingredients with the wet ingredients and add 4 oz of softened unsalted butter.
Knead the mixture on low speed for 10-15 minutes until smooth and elastic, adjusting time based on flour type.
Transfer the dough to a greased bowl, cover with plastic wrap, and let it rise overnight or until doubled in size.
Once risen, cut the dough into two equal pieces, then each piece into three for braiding.
Roll each piece into a 12-inch rope and braid them together. Place on a parchment-lined baking tray and cover loosely to rise for 30-45 minutes.
Preheat the oven to 350°F (175°C).
Brush the loaves with a mixture of beaten egg yolk and whole milk for color.
Bake in the center of the oven for 30 minutes, then let cool for 30 minutes before serving.
