Baked Apples

1/2 cup sugar
1/2 teaspoon fresh ground nutmeg
1 teaspoon cinnamon
1 teaspoon butter
1 cup apple juice

Slice about a half inch off the top of each apple.

Sprinkle fruit fresh on the apples to prevent browning.

Core the apples, ensuring not to break through to the bottom.

Place the cored apples in a casserole dish.

In a bowl, mix together 1/2 cup sugar, 1/2 teaspoon fresh ground nutmeg, and 1 teaspoon cinnamon.

Stuff the sugar mixture into the cavity of each apple.

Press about 1 teaspoon of butter into the cavity of each apple and sprinkle a little more sugar on top.

Pour 1 cup of apple juice into the casserole dish around the apples, not over them.

Cover the dish with tin foil, spraying the foil to prevent sticking.

Bake in a commercial oven for about 45 minutes to 1 hour, depending on desired softness of the apples.

Serve warm, optionally with a scoop of vanilla ice cream and garnish with a cinnamon stick and fresh mint.
