Baked Apples

Roughly chop 1/3 cup of pecans and set aside.

In a mixing bowl, combine 1/3 cup packed brown sugar, freshly grated nutmeg, and 1/2 teaspoon of cinnamon. Mix briefly.

Wash the apples and scoop out the core and a bit of the flesh using a teaspoon or tablespoon, creating a well without going through to the bottom.

Place the hollowed apples in a baking dish.

Fill the apples with the brown sugar and pecan mixture, adding more nuts if desired.

Add a splash of vanilla extract on top of the filling.

Place a pat of butter on top of each filled apple, if desired.

Add 1 1/4 to 1 1/2 cups of water (or apple juice/cider) to the baking dish to create a water bath.

Bake the apples in a preheated oven at 350°F for about 50 minutes, until softened but not falling apart.

Baste the apples with the juices halfway through baking to keep them juicy.

After baking, tent the apples with foil and let them cool slightly before serving.
