2 Honeycrisp apples

1/4 cup sliced almonds
1/4 cup brown sugar
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/4 cup chopped craisins (dried cranberries)
1/2 cup apple cider

Preheat the oven to 350 degrees Fahrenheit.

In a bowl, combine 1/2 cup old-fashioned oats, 1/4 cup sliced almonds, 1/4 cup brown sugar, 1 teaspoon cinnamon, 1/2 teaspoon nutmeg, 1/4 cup chopped craisins, and 2 tablespoons melted butter. Stir to mix well.

Hollow out 2 Honeycrisp apples using a melon baller, removing the seeds and core.

Trim the outer lip of the apples to prevent splitting during baking.

Stuff the hollowed apples with the oat mixture, mounding it on top.

Pour 1/2 cup of apple cider into the bottom of a baking pan to help steam the apples.

Place the stuffed apples in the pan and cover with foil or a lid.

Bake in the preheated oven for 45 to 60 minutes, checking for tenderness with a knife.

If the apples are not tender after 45 minutes, baste them with the liquid in the pan and return to the oven for an additional 10 minutes.

Once tender, remove the apples from the oven and drizzle the thickened juice from the pan over them.

Serve the baked apples with a small scoop of French vanilla ice cream and drizzle with caramel sauce.
