¼ small white onion peeled and sliced into slivers
¼ teaspoon salt
¾ lb. oyster mushrooms chopped into large pieces
1 medium white potato peeled and cut into bite-size pieces
¼ cup water
3 small Roma tomatoes roughly chopped
1 small jalapeno pepper stem removed and roughly chopped
1 to 2 whole garlic cloves peeled
½ vegetable bouillon cube
¼ teaspoon salt adjust to taste
¼ teaspoon ground black pepper
½ teaspoon ground cumin adjust to taste

Heat the olive oil in a pan over medium heat.

Add the sliced onion and sauté until translucent.

Stir in the chopped oyster mushrooms and cook until they start to brown.

Add the bite-size pieces of potato and mix well.

Pour in the water and add the vegetable bouillon cube, stirring until dissolved.

Add the chopped tomatoes, jalapeno, garlic cloves, salt, black pepper, and cumin.

Cover and let simmer until the potatoes are tender, stirring occasionally.
