Pour concentrated cranberry juice into a pot and fill with water to make 1 liter.
Heat the juice on medium heat until boiling.
Measure 115 grams of semolina using a scale.
Add semolina to the boiling juice while whisking to avoid lumps.
Continue whisking for about 10 minutes until thickened, adjusting heat as necessary.
Taste the mixture and add about 40 to 50 grams of sugar, whisking to incorporate.
If needed, add 3 more tablespoons of sugar and whisk again until dissolved.
Pour the thickened mixture into a bowl and let it cool slightly.
Whisk the cooled mixture to incorporate air until it reaches a mousse-like consistency.
Serve the mousse in a bowl with milk around it.
