1

Start by soaking the red peas and black-eyed peas in hot water, covering them and setting aside until the next day.

2

Wash the meats (fresh beef, salted beef, tripe, chicken foot) with vinegar and lemon juice, then place them in a large bowl.

3

Season the meats with garlic powder, onion powder, paprika, complete seasoning, meat seasoning, chicken bouillon, and black pepper.

4

Transfer the seasoned meats to a large Ziploc bag and refrigerate overnight.

5

The next day, boil the red peas and black-eyed peas separately in two pots with water, saving the water after straining the peas.

6

Using a pressure cooker, pressure the tripe first for 15 minutes, then add the beef and pressure for another 15 minutes, followed by the chicken foot for 15 minutes.

7

Blend coconuts to make homemade coconut milk, or use canned coconut milk if preferred.

8

In a preheated Dutch oven with oil, sauté onions, garlic, ginger, peppers, and basil for about 2 minutes to release flavors.

9

Add the boiled peas and meats to the pot, stirring well.

10

Add washed parboiled rice to the pot and mix well with the other ingredients.

11

Season the mixture well and fry for about 7 minutes to combine flavors.

12

Pour in the coconut milk and the reserved broth from the peas and meats, adding just enough liquid to cover the rice by about an inch.

13

Add thyme and habanero peppers, cover, and simmer on medium heat, stirring occasionally to prevent sticking.

14

Add a little kas rib for color and flavor, then cover and continue cooking.

15

When the rice is almost done, add okras to steam for about 5 minutes.

16

Finish by adding more green onions and cilantro before serving, leaving a little liquid for moisture.
