Instructions
- 1Preheat your oven to 375°F (190°C).
- 2Grease a baking dish with olive oil or butter.
- 3In a bowl, whisk together the heavy cream, salt, and pepper.
- 4Pour the cream mixture into the greased baking dish.
- 5Carefully crack the eggs into the dish, spacing them evenly apart.
- 6Sprinkle the grated cheese and chopped herbs over the eggs.
- 7Bake in the preheated oven for about 15-20 minutes, or until the eggs are set to your liking.
- 8Remove from the oven and let cool for a few minutes before serving.

- 2In a separate small bowl, whisk together the pesto sauce, olive oil, lemon juice, salt, and pepper.
- 3Pour the pesto dressing over the chickpea mixture and toss gently to combine.
- 4Taste and adjust seasoning if necessary, adding more salt, pepper, or lemon juice as desired.
- 5Let the salad sit for about 10 minutes to allow the flavors to meld.
- 6Serve chilled or at room temperature.

- ●1 avocado, sliced
- ●1 cup cherry tomatoes, halved
Instructions
- 1In a bowl, combine olive oil, red wine vinegar, parsley, cilantro, garlic, red pepper flakes, salt, and black pepper to make the chimichurri sauce.
- 2In a skillet over medium heat, add the diced chicken and cook until browned and cooked through, about 7-10 minutes.
- 3Once the chicken is cooked, remove from heat and toss with half of the chimichurri sauce.
- 4In serving bowls, layer the cooked rice as the base.
- 5Top the rice with the chimichurri chicken, sliced avocado, and cherry tomatoes.
- 6Drizzle additional chimichurri sauce over the top if desired.
- 7Serve immediately and enjoy your Chicken Chimichurri Bowls.
