Instructions

  1. 1Preheat your oven to 375°F (190°C).
  2. 2Grease a baking dish with olive oil or butter.
  3. 3In a bowl, whisk together the heavy cream, salt, and pepper.
  4. 4Pour the cream mixture into the greased baking dish.
  5. 5Carefully crack the eggs into the dish, spacing them evenly apart.
  6. 6Sprinkle the grated cheese and chopped herbs over the eggs.

  3. 3Once the chicken is cooked, remove from heat and toss with half of the chimichurri sauce.
  4. 4In serving bowls, layer the cooked rice as the base.
  5. 5Top the rice with the chimichurri chicken, sliced avocado, and cherry tomatoes.
  6. 6Drizzle additional chimichurri sauce over the top if desired.
