Heat coconut oil in a pan.

Chop the white part of the green onions and add to the pan, reserving the green tops for later.

Saute the onions for 2-3 minutes.

Add finely chopped garlic and optional pickled jalapeno to the pan and continue to sauté.

Season with salt, pepper, and about 1 teaspoon of Italian seasoning.

Add 1.5 cups of chopped tomatoes to the pan and mix, cooking just to heat through.

Add 2 cups of spinach to the pan and let it wilt for about 1 minute.

Stir in some of the reserved green onion tops and half of the chopped parsley, saving the rest for garnish.

Turn off the heat and prepare two lightly greased shallow baking dishes.

Add a layer of freshly grated Romano cheese to the bottom of each dish.

Divide the sautéed mixture evenly between the two dishes, spreading it out.

Top with more Romano cheese and drizzle a little half-and-half over the top.

Make impressions in the mixture for the eggs, being careful not to break the yolks when cracking them in.

Preheat the oven to 375°F and place the dishes on a baking pan for easier handling.

Bake in the oven for 15-20 minutes, checking for doneness.

If the tops are still jiggly after 15 minutes, continue baking for another minute or two until the whites are set but yolks are still runny.

Remove from the oven and sprinkle with more cheese and garnish with the reserved green onion tops and parsley.
