Penne Arrabiata with Chicken

Heat a skillet over medium heat and add a few tablespoons of extra virgin olive oil.

Chop one onion and 2-3 cloves of garlic, then add them to the skillet with a pinch of salt.

Sauté the onion and garlic until softened, about a few minutes.

Add just under a tablespoon of red chili flakes to the skillet and sauté for about 1.5 minutes to activate the oils.

Add a 28 oz can of diced tomatoes to the skillet and stir to combine with the onion and garlic.

Cover the skillet and let the sauce simmer for about 45 minutes, stirring occasionally.

After 45 minutes, add a couple tablespoons of red wine vinegar and 3/4 handful of fresh chopped basil to the sauce.

Taste the sauce; if it's too acidic, add a little sugar and stir to combine.

Let the sauce cook for an additional 10 minutes if desired, or mash it for a smoother consistency.

After about 1.5 to 2 hours of simmering, check the sauce for desired consistency and flavor.

In a separate pot, boil water for the pasta.

Season one chicken breast with salt and pepper on both sides and sear it in the same skillet for 2-3 minutes on one side.

Flip the chicken breast and cook the other side until fully cooked through.

Remove the chicken from the skillet and let it rest on a cutting board for a couple of minutes before dicing it into bite-sized pieces.

Add the sauce back into the skillet and heat it on low while the pasta cooks.

If the sauce looks dry, reserve some pasta water and add it to the skillet as needed.

After about 2 minutes of tossing the pasta and sauce together, add the diced chicken back into the skillet and mix well.
