This delightful treat symbolizes the end of winter and the arrival of spring, often filled with whipped cream and adorned with powdered sugar. Today, it has become a beloved pastry not only in Estonia but also in neighboring countries, where variations may include different fillings and toppings.

Warm 250 g of milk to 37°C.
Break up 25 g of fresh yeast and add it to the warm milk.
Add 100 g of sugar and 1/2 teaspoon of salt to the yeast mixture.
Gradually mix in 450 g of all-purpose flour until combined.
Add 100 g of soft butter and squish it into the dough.
Knead the dough until it feels right, adding more flour if necessary.
Cover the dough with a kitchen towel and let it rise for 30 minutes.
After 30 minutes, divide the dough into 8 equal portions and let them rise for another 10 minutes.
Preheat the oven to 180°C.
Brush the buns with cream before baking.
Bake the buns until golden brown, checking for a nice smell and color.
Slice the top off each bun and scoop out some of the inside.
Fill the buns with jam and replace the tops.
