Ingredients

  • 2 lbs potatoes (Yukon Gold or similar)
  • 1 cup heavy cream
  • 1/2 cup unsalted butter
  • 8 oz cheese (Tomme or Gruyère, grated)
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp garlic powder (optional)

Instructions

  1. 1Peel and cut the potatoes into chunks.
  2. 2Place the potatoes in a large pot and cover with cold water. Add salt and bring to a boil.
  3. 3Cook the potatoes until tender, about 15-20 minutes. Drain and return to the pot.
  4. 4Add the heavy cream and butter to the potatoes. Mash until smooth and creamy.
  5. 5Over low heat, stir in the grated cheese until melted and fully incorporated.
  6. 6Season with black pepper and garlic powder, if using. Stir until the mixture is smooth and stretchy.
