1 shallot, diced
2 Tbsp minced garlic
½ Tbsp minced ginger
4 scallions (white part diced, green part cut into 1 inch stalks)
handful of cilantro, cut into stalks
2 cups oil
½ tsp salt
½ tsp chicken bouillon powder (optional)
toasted sesame seeds

Chop chicken wings into bite-sized pieces using a bone cleaver or heavy-duty kitchen scissors.

Marinate the chicken with 1 Tbsp soy sauce, 1 Tbsp oyster sauce, ½ tsp ground pepper, ½ tsp garlic powder, ½ tsp sugar, and 1 Tbsp cornstarch. Drizzle in 1.5 Tbsp cooking oil and mix carefully.

Soak 8 spicy chilies and 1 cup mild chilies in clean water for 3 minutes.

Soak ¼ cup raw peanuts in clean water for 15 minutes.

Heat 2 cups of oil in a wok over medium heat and add the soaked peanuts. Stir every 30 seconds as the oil heats up.

Deep fry the peanuts until they are crispy, watching for less bubbling and a deeper color, then remove and let cool.

Increase the oil temperature to 380℉ and add the marinated chicken wings. Fry for 3-4 minutes until golden brown, then set aside.

Pour out the oil from the wok and clean it. Add a drizzle of fresh oil to the wok.

Add the soaked red chilies and Sichuan peppercorns to the wok and stir over medium heat until moisture evaporates.

Add diced garlic, ginger, and shallot to the wok and sauté until fragrant.

Add ½ tsp salt and optionally, ½ tsp chicken bouillon powder. Introduce the fried chicken back into the wok and stir until well combined.

Add the crispy peanuts, scallion, cilantro, and toasted sesame seeds. Toss thoroughly to combine.
