200 ml Coconut Milk
2 tbsp Besan, gram flour
1/2 cup Carrot, diced
1/2 cup Baby Corn, chopped
1/2 cup Beans, chopped
1 tbsp Ginger, chopped
1 tbsp Garlic, chopped
1 tbsp Green Chilli, chopped
1/2 cup Onion Paste
Salt as per taste
1 tsp Coriander Powder
1/2 tsp Turmeric Powder
1 tsp Jeera Powder
1 tbsp Jaggery or Sugar, as per choice
200 ml water
1 cup Boiled noodles
Fried Garlic
Fried Onions
Roasted Peanuts
Fried Noodles
Sliced Onion
Spring Onions Greens

In a small bowl, add besan, water & mix well to form a slurry. Now add this slurry to coconut milk and mix well.

In a pan heat oil, add ginger, garlic & cook for a couple of minutes.

Now add onion paste & cook till the water dries off.

Once done add finely chopped green chillies, powdered spices, salt & sauté it.

Now add the veggies (carrot, baby corns, beans) cook for a 4-5 mins.

Add water and give it a boil. Add jaggery powder or sugar & cook till it melts.

Next add coconut milk mixture prepared in the beginning. (Make sure you turn off the flame while adding it). Turn on the flame & cook on slow flame for 2-3 mins.

Take a soup bowl, add boiled noodles & pour the soup on it.

Garnish with sliced onions, roasted peanuts, fried onions, fried garlic, fried noodles and spring onion greens.
