Applesauce Muffins

8 apples – peeled, cored, and chopped
1 ½ cups (375 ml) water
½ cup (125 ml) white sugar
1 tsp ground cinnamon
1 cup (250 ml) butter, softened
2 cups (500 ml) sugar
2 large eggs, room temperature
1 tsp vanilla extract
2 cups (500 ml) applesauce
4 cups (1 L) all purpose flour
1 tsp baking soda
1 tsp ground cinnamon
1 tsp ground allspice
¼ tsp ground cloves
1 cup (250 ml) chopped walnuts (optional)
¼ cup (65 ml) sugar & cinnamon mix for topping (optional)

In a saucepan, combine apples, water, sugar, and cinnamon.

Cover and cook on medium heat for 15 to 20 minutes, or until apples are soft.

Remove from heat and let cool. Then mash with a fork or potato masher.

Preheat oven to 350 degrees Fahrenheit.

In a mixing bowl, cream butter and sugar together until light and fluffy, about 5-7 minutes.

Beat in eggs and vanilla.

Stir in applesauce.

In a separate mixing bowl, combine flour, baking soda, and spices; then stir into creamed butter and sugar mixture.

If desired, fold in chopped walnuts.

In a muffin tray, grease the cups or place paper muffin cups into the tray. Fill each cup ¾ full.

Bake 20-25 minutes, or until a toothpick comes out clean.

Cool 5 minutes before removing the muffins onto wire cooling racks.

If desired, sprinkle the tops with sugar & cinnamon mixture.
