Traditionally made with beets, it symbolizes the agricultural bounty of the region and is often served during family gatherings and holidays. Today, variations exist worldwide, with each culture adding its unique twist, making it a beloved dish across many nations.

Greek yogurt offers similar creaminess with fewer calories.
Add 2 to 3 tablespoons of oil to a pot and turn the heat on to high.
Add beef, season with salt and pepper, and stir to brown on all sides.
Add chopped onions and shredded carrots, cooking until the carrots soften and the onions become translucent.
Stir in tomato paste and cook for 2 to 3 minutes to reduce bitterness.
Add 10 to 12 cups of water to the pot, filling it at least three-quarters full.
Add shredded beets and stir, scraping up bits from the bottom of the pot for flavor.
Bring the water to a boil and cook uncovered for 20 to 25 minutes.
Chop fresh dill and parsley, setting aside for garnish.
Add cleaned, peeled, and chopped potatoes and shredded cabbage to the pot.
Add three-quarters of the fresh dill and parsley, sugar, salt, and pepper, then stir.
Lower the heat to low, cover the pot, and simmer for 15 minutes.
Serve with a dollop of sour cream and sprinkle with extra fresh dill and parsley.
