4-5 medium sized potatoes

Preheat the soup pot and add a little oil.

Brown 1.5 pounds of cubed beef tri-tip in batches to avoid overcrowding the pot, seasoning with salt and black pepper.

Remove the browned beef and set aside.

Add 2 tablespoons of salted butter to the pot.

Add 2 chopped celery sticks, 3 medium diced carrots, and 1 large diced sweet onion; sauté for 4-5 minutes until the onion is translucent.

Add 2 minced garlic cloves, 0.5 teaspoon ground cumin, 0.5 teaspoon ground coriander, and 0.5 tablespoon sugar; cook for 30 seconds.

Return the beef to the pot.

Add 3 finely diced beets, 4 cups of beef broth, and 6 cups of water; season with 1.5 teaspoons of salt and black pepper.

Cover and bring to a boil over high heat, then reduce to low and simmer for 1 hour.

After 1 hour, add 4-5 chopped medium potatoes and cook for 15 minutes.

Add 2 cups of shredded cabbage, 2 tablespoons of fresh parsley, and 2 tablespoons of fresh dill; mix and cook for 1-2 minutes until the cabbage is tender.
