Add vegetable oil to a pan and heat on medium.
Place corn tortillas in the pan to heat for pliability, about 10-15 seconds on each side.
Use about 15 corn tortillas.
Cook 1 pound of ground beef in the same pan, seasoning with 2 teaspoons chili powder, 1/2 teaspoon ground cumin, 1/2 teaspoon garlic powder, 1/2 teaspoon onion powder, and 1 teaspoon salt. Add black pepper to taste.
Drain the fat from the cooked beef and transfer it to a bowl.
In the same pan, add 4 tablespoons of vegetable oil and 1/4 cup all-purpose flour to make a roux, stirring continuously.
Add 2 tablespoons chili powder, 1 teaspoon ground cumin, 1/2 teaspoon garlic powder, and 1 teaspoon onion powder to the roux and mix well.
Gradually add 2 cups of chicken broth to the roux, stirring continuously until thickened, about 10 minutes. Taste and adjust salt if needed.
Grate 16 ounces of colby jack cheese and mix 1 cup of it into the beef mixture.
Spread some enchilada sauce in the bottom of a baking dish.
Lay a heated tortilla in the baking dish, add the meat and cheese mixture, and roll it up. Repeat until all tortillas and filling are used.
Distribute the remaining cheese evenly over the rolled enchiladas.
Preheat the oven to 375°F (190°C).
Pour the remaining enchilada sauce over the top and spread it evenly.
Bake in the oven for 30 minutes, uncovered if foil is not available.
Serve topped with sour cream and lettuce.
