Focaccia, originating from ancient Rome, was traditionally baked in the ashes of the hearth and served as a staple for Roman soldiers. This versatile bread is often enjoyed with meals or as a snack, showcasing the simplicity of Italian cuisine. Today, focaccia is celebrated worldwide, with countless variations featuring different toppings, reflecting local tastes and ingredients.

Dissolve instant yeast in water.
Mix water and flour until no dry flour remains.
Cover with cling wrap and let ferment overnight for about 12 hours.
Measure more bread flour into a bowl and add the overnight polish.
Add yeast dissolved in water, salt, sugar, and olive oil to the bowl.
Use a KitchenAid mixer with a spiral hook to knead the mixture on low speed for about 8 minutes.
Chop fresh rosemary and black olives.
After 8 minutes, add the chopped olives to the dough and knead for another 2 minutes.
Shape the dough into a tight ball and place it in a glass bowl, covering it with cling wrap.
Let the dough rise for 1 hour until puffy.
De-gas the dough by folding it into thirds and shaping it into a square loaf.
Oil a tray with extra virgin olive oil and let the dough rest for 20-30 minutes.
Slice tomatoes thinly for topping.
After resting, press down on the dough to shape it, stretching it gently.
Let the dough rest again for 10-20 minutes if it resists stretching.
Top the dough with sliced tomatoes and let it rise for another 10-20 minutes.
Preheat the oven to 200 degrees Celsius.
Bake the focaccia for 25 minutes.
After baking, drizzle more olive oil on top while it's still hot.
