Chop the onion and prepare to sauté it in a frying pan with preheated olive oil.
Add the chopped onion to the frying pan and sauté until softened, about 4-5 minutes.
Add rice to the sautéed onions and cook for a few more minutes to soften the rice.
Add spices: salt, black pepper, and paprika to the mixture.
Add ground meat to the pan and mix well; if the meat is hard to break, add a little water to help mix.
Cook the mixture on medium heat for about 10 minutes until the meat is cooked through.
Allow the stuffing to cool for 10-15 minutes before handling it.
Prepare a non-stick cooking pan by placing a few vine leaves at the bottom to prevent sticking.
Take a vine leaf, shiny side facing out, and place a spoonful of stuffing in the center.
Fold the sides of the vine leaf over the stuffing and roll it tightly to form a bundle, placing the seam side down in the pan.
Repeat the rolling process until all stuffing is used, creating layers in the pan if necessary.
Place a plate on top of the rolled sarmi to keep them in place during cooking.
Cover the sarmi with water until just submerged, adding a touch of olive oil on top.
Cover the pan and cook on medium-low heat for 20-30 minutes, ensuring it doesn't boil too hard to avoid breaking the sarmi.
After cooking, remove the plate and serve the sarmi with a bit of the cooking juice and optional yogurt.
