1

Prepare all ingredients beforehand for convenience.

2

Finely chop 4 chayotes, 1 chile dulce, and 1 onion. Set aside.

3

In a heated pot, add 2 tablespoons of vegetable oil.

4

Add 500 grams of ground beef to the pot and sauté for about 5 minutes until cooked through.

5

Break up the beef as it cooks to ensure even cooking.

6

Add 1 tablespoon of achiote paste and 1 cube of consommé to the beef, breaking the consommé into smaller pieces to help it dissolve.

7

Add the chopped chile dulce, onion, and 4 chopped vainicas (ejotes) to the pot.

8

Chop 3 cloves of garlic and add them to the mixture.

9

Mix everything well to combine the flavors and colors.

10

Add the chopped chayotes to the pot and stir to mix with the other ingredients.

11

Pour in 1/2 cup of water to help the chayotes cook without sticking to the pot.

12

Sprinkle in salt to taste (about 1 teaspoon).

13

Cover the pot and let it simmer on medium heat for about 10 minutes until the chayotes are tender.

14

After 10 minutes, check the consistency of the picadillo, ensuring it is not too watery.

15

Add chopped cilantro at the end for freshness before serving.
