Add chopped potatoes and stir to coat in spices.
Pour in water to cover the ingredients and bring to a boil.
Reduce heat to low, cover, and simmer until potatoes are tender, about 20 minutes.
Add spinach and chickpeas, stirring to combine.
Season with salt, black pepper, and lemon juice; cook for another 5 minutes.
If using saffron, dissolve it in a tablespoon of warm water and stir into the stew before serving.
Garnish with fresh herbs before serving.
