Chicken Piccata Pasta

10-12oz vegan chicken pieces
6-8 tbsps vegan butter
2 tbsps minced garlic
1/3-1/2 cup capers
3/4-1 cup broth
1/4 cup vegan Parmesan
2 tbsps nutritional yeast
Fresh parsley
1 tsp Garlic pepper
1 tsp Crushed red pepper
1-2 lemons juiced
12oz cooked pasta plus 1/4 cup pasta water reserved

Cook chicken according to directions

Remove from pan

Return pan to heat

Melt 1 tbsp butter

Once melted add in your garlic and capers

Cook for 2-3 minutes

Add in garlic pepper and crushed red pepper

Mix well

Add in remaining butter, roughly 4-6 tbsps

Once melted add in your broth

Cook stirring often until cooked down

Add in juice from 1 lemon

Mix well

Add in your cooked pasta, pasta water, nutritional yeast, Parmesan, cooked chicken and a sprinkle of fresh parsley

Toss

Cook for 2 minutes

Remove from heat

Serve with fresh parsley and lemon slices
