1 lb beef shank
1.5 lbs chicken thighs
8 cups water
2 medium onions
4 cloves garlic
2 cups carrots
2 cups potatoes
2 cups zucchini
2 cups cabbage
1 cup corn
1/2 cup cilantro
2 limes
1 tablespoon salt
1 teaspoon black pepper
3 bay leaves

Place pork shoulder, beef shank, and chicken thighs in a large pot.

Add enough water to cover the meat completely.

Bring the water to a boil over high heat.

Reduce heat to medium-low and skim off any foam that rises to the surface.

Add onions, garlic, and bay leaves to the pot.

Simmer for 1.5 to 2 hours until the meats are tender.
