Peel the yuca root and chop it into chunks.
Put the yuca into your pressure cooker and fill it with enough water to cover the yuca. Add salt.
Cook for 20 minutes in the pressure cooker. If using a regular pot, bring the water to a boil, add the yuca and pinch with a fork occasionally until it is very soft.
Remove the yuca from water. Remove the 'stems' or 'roots' from the center of the yuca.
Drizzle with mojo and enjoy!
