Peel and cut yuca into 3-4 inch pieces.
Cover yuca with salted water and bring to a boil until tender.
Check tenderness by piercing with a fork; it should go in but still hold together.
Drain the water and add cold water to the yuca, a process called 'asustar' to soften it further.
Fry pork pieces in about 1/2 cup of oil until nearly cooked through.
Add minced garlic and sliced white onion to the pork, cooking until the onion is translucent but still crispy.
Season with salt, black pepper, and lime juice, cooking for one more minute before reserving.
Drain the yuca well and place it on a serving dish, topping it with the mojo and pork.
