Jerk Whole Chicken

1 tbsp Molasses
Pinch of Nutmeg
1 thumb size Ginger
1/2 cup Distilled vinegar
1/4 cup Cooking olive oil
1 tsp Salt

Jalapeños provide heat with fewer calories, while bell peppers are milder and more affordable.

Prepare the jerk marinade by blending scallions, garlic, ginger, thyme, allspice, nutmeg, cinnamon, brown sugar, lime juice, soy sauce, vegetable oil, salt, black pepper, and habanero peppers until smooth.

Rinse the whole chicken under cold water and pat dry with paper towels.

Rub the jerk marinade all over the chicken, ensuring to get under the skin for maximum flavor.

Cover the chicken and marinate in the refrigerator for at least 4 hours, preferably overnight.

Preheat the grill to medium-high heat, or preheat the oven to 375°F.

If grilling, place the chicken on the grill and cook for about 1 hour, turning occasionally, until the internal temperature reaches 165°F.

If roasting, place the chicken in a roasting pan and roast for about 1.5 hours, basting occasionally, until the internal temperature reaches 165°F.

Remove the chicken from the grill or oven and let it rest for 10-15 minutes before carving.
