Today we're making prime rib roast for Christmas.

Get a bone-in prime rib roast, have the butcher cut the bones off and tie them back on.

This roast is about 5 pounds and will feed 4 to 5 people.

Preheat the oven to 450°F (232°C).

Season the roast generously with salt and black pepper on all sides.

In a bowl, combine about a quarter cup of chopped fresh parsley, fresh rosemary, and 10 chopped cloves of garlic.

Add about 3 tablespoons of olive oil to the herb mixture for moisture.

Spread the herb mixture all over the roast.

Place the roast in the oven at 450°F (232°C) for the first 15 minutes to sear it.

After 15 minutes, lower the oven temperature to 350°F (177°C) and continue cooking.

For medium-rare, cook about 15 minutes per pound; for well-done, cook about 18 to 20 minutes per pound; for rare, cook about 12 to 13 minutes per pound.
