Take the prime rib roast out 2.5 hours before cooking to bring it to room temperature, covering it with Saran Wrap.
French cut the bones if desired, separating the meat from the bones and tying it back with twine for easier seasoning.
Rub garlic infused olive oil on the roast to help the seasoning stick.
Generously season the roast with kosher salt and black pepper, ensuring even coverage by holding the seasoning high while sprinkling.
Place the roast in a roasting pan bone side down.
Calculate the cooking time by multiplying the weight of the roast (8.5 lbs) by 5 minutes per pound, resulting in 44 minutes of cooking time.
After 44 minutes, turn off the oven without opening the door and let the roast rest in the oven for about 2 hours.
