Boil cassava in salted water until soft.
Heat oil in a skillet and add cumin seeds, mustard seeds, fenugreek seeds, and curry leaves; sauté until fragrant.
Add grated garlic, chopped tomatoes, turmeric powder, coriander powder, Kashmiri chili powder, cumin powder, and salt; cook for a few minutes.
Stir in boiled cassava and mix well with the spices.
Pour in coconut milk and water; adjust the consistency with more water if desired.
Add tamarind pulp and sugar; simmer until heated through.
Garnish with fresh coriander and serve with lemon or lime wedges.
