Seared Salmon with Herbed Oyster Mushroom Sauce

3 tbsp of chives
1/3 cup of parsley
1 1/2 cup of oyster mushrooms
1/4 cup of leeks
1 cup of veggie stock
1 cup of unsweetened non-dairy milk
1/2 tsp of corn starch
1 tsp of water
Filet of salmon
1 tbsp of avocado oil

Add avocado oil to medium heated saute pan

Sear salmon until golden brown and then flip

Cook until completely cooked, the salmon should look pink inside

Remove from pan and let rest on plate

Add leeks and saute until translucent then add oyster mushrooms and cook until golden brown

Add 1 cup of stock and 1 cup of unsweetened non-dairy milk (cashew is a good option)

Add cornstarch in water and mix in a separate small bowl

Stir cornstarch slurry in sauce to thicken

Add chives and parsley. Serve over salmon.
