Preheat the oven and prepare a store-bought pie crust, puncturing it with a fork.
Bake the crust until the eggs are golden, then let it cool down.
In a pan, use cooking spray to sauté the onion and leek first.
Add the diced Canadian bacon to the pan, seasoning with a little salt and black pepper, and some green seasoning.
Add spinach last to the pan to avoid overcooking it.
Turn off the heat and add a little butter to the vegetable mixture, then let it cool down.
In a large bowl, crack all 9 eggs and lightly beat them with a wire whisk.
Add sour cream to the eggs and mix well, then add milk and continue blending.
Season the egg mixture with salt, black pepper, and nutmeg, then blend again.
Add the cooled vegetable and bacon mixture to the egg mixture, blend well.
Add a small handful of mozzarella cheese into the egg mixture for flavor.
Fill the prepared pie crust with the egg and vegetable mixture.
Top the filled quiche with mozzarella cheese, followed by gruyere cheese for color and flavor.
Bake the quiche in the oven at 350°F for 35-40 minutes, checking for doneness.
After 37 minutes, remove the quiche from the oven, cut off any burnt edges, and present.
