Heat enough water in a small pot to hydrate the chiles.
In a clay pot, add ground beef with a little water and seasoning, cooking for about 15 minutes until water evaporates.
Slice the onion into half moons and tomatillos into small triangles.
Hydrate the chiles in boiling water for about 10 minutes.
Blend the hydrated chiles with 1 cup of the water used for hydrating, a piece of onion, salt, garlic, and oregano for 2 minutes.
Strain the blended sauce and set aside.
Once the water has evaporated from the beef, add oil to brown the meat for about 5 minutes.
Add the sliced onion to the beef and cook for 2 minutes until softened.
Add the tomatillos and mix for about 2 minutes to combine flavors.
Add the blended chile sauce and cook for 3 minutes to incorporate everything.
Let simmer for about 10 minutes before serving.
