vegetable oil

Soak brown beans in water overnight.
Drain and rinse the soaked beans.
Heat vegetable oil in a pot over medium heat until shimmering.
Sauté chopped onions until translucent, about 5 minutes.
Add minced garlic and grated ginger; cook until fragrant, about 1 minute.
Stir in diced tomatoes and cook until softened, about 3-4 minutes.
Add chopped carrots and bell peppers; cook for another 5 minutes.
Pour in water and bring to a boil.
Add soaked brown beans, cumin, coriander, salt, and black pepper.
Reduce heat and simmer until beans are tender, about 1-1.5 hours.
Add chopped spinach and lime juice; cook for an additional 5 minutes.
Adjust seasoning to taste before serving.
