1 lb Flank Steak (thinly sliced on the bias)
1 Can Coca-Cola
¼ C Cowboy Crust

6-8 Telera Rolls (Mexican sandwich rolls)

24 HRS ahead, make your escabeche: In a blender, blend olive oil with habanero and strain into a small bowl. Pour water, vinegar, garlic, shallots, onion and bay leaf into a saucepan and bring to a simmer. When onions begin to become tender, remove from heat. Pour hot mixture over tomatoes in a mixing bowl. Add habanero olive oil and season with salt to taste. Seal bowl and refrigerate for at least 24 hrs.

8 HRS ahead, marinate your meat: Mix spices blends together. In a 9 x 13 pyrex, add a layer of thinly sliced beef, season with mixed blends (just enough to coat top layer). Add another layer of beef, season and repeat until beef is all used (there should be left over blend to use while grilling). Pour Coca Cola over the top of the beef and marinade for a minimum of 8 hrs.

Cook the meat: Heat a grill at 550 degrees and grill to desired likeness. Spice the meat: Place meat in a mixing bowl and dust cooked beef with remaining blend mix.

Make the Avocado Schmear: In a blender, blend all the ingredients. Add a T of water at a time if the schmear is too thick.

Build the Torta: Toast the telera bread, slather on the schmear, add beef and top with escabeche and cilantro.
