Originating in Detroit, this pizza style features a thick, rectangular crust with a crispy edge, often topped with cheese and sauce layered in a unique way. Traditionally served in a blue steel pan, it reflects the city's industrial roots. Today, Detroit-style pizza has gained popularity across the U.S. and beyond, with many pizzerias offering their own interpretations.

In a mixing bowl, combine bread flour and salt.
Add instant yeast to one side of the bowl and salt to the other side.
Mix the flour, salt, and yeast together.
Turn on the stand mixer to medium-low and slowly add lukewarm water until a dough forms.
Knead the dough for 8 to 10 minutes until smooth.
Place the kneaded dough in an oiled bowl, cover with cling wrap and a tea towel, and let it proof for 2 hours at room temperature.
After 2 hours, check the dough for bubbles and that it has risen slightly.
Preheat the oven to 500°F (260°C).
Grease a rectangular baking pan with 2 tablespoons of olive oil.
Press the dough into the corners of the pan, covering the bottom.
Cover the dough and let it rest for at least 30 minutes to relax the gluten.
After resting, check the dough; it should be easier to stretch to the edges.
Add cubed mozzarella cheese evenly over the dough, especially into the corners.
Sprinkle jack cheese all over the dough as well.
Layer pepperoni generously over the cheese, ensuring it's well-covered.
Dollop pizza sauce over the top of the pepperoni, spreading it out as desired.
Bake in the preheated oven for 15 to 20 minutes until the edges are charred and the cheese is bubbling.
Remove the pizza from the oven and let it cool slightly before slicing.
