Smoked Red Pepper Hummus

Drain and rinse the canned chickpeas under cold water.

In a food processor, combine the chickpeas, smoked red peppers, tahini, garlic, and lemon juice.

Blend until smooth, scraping down the sides as needed.

While blending, slowly drizzle in the olive oil until fully incorporated.

Add cumin, salt, black pepper, and water to achieve desired consistency.

Blend again until the mixture is creamy and smooth.

Taste and adjust seasoning, adding more salt or lemon juice if necessary.

Transfer the hummus to a serving bowl.

Drizzle additional olive oil on top and sprinkle with paprika.

Garnish with chopped fresh parsley.

Serve with pita bread and vegetable sticks for dipping.
