Heat 2 cups of oil in a frying pan over medium heat until shimmering.
Fry the coins in batches until golden brown, about 3-4 minutes per side.
Remove and drain on paper towels to absorb excess oil.
Sprinkle with 2 tablespoons of sesame seeds and 1/4 cup of chopped spring onions before serving.
